The Bak Kwa, liken to Chinese beef jerky, are thin pork slices that are dipped into a sugar and spice marinade, before they are air dried and roasted to perfection over charcoal. As red is an auspicious colour which the Chinese believe signifies luck and fortune, these succulent meat in a festive deep red hue are exremely popular during Chinese New Year.
