Frédéric Rouzaud, the seventh generation of the Roederer lineage, serves as the CEO of Roederer Group. The group brings together all Louis Roederer’s wine estates and Houses, including Champagne Louis Roederer, Château Pichon Longueville Comtesse de Lalande, Domaines Ott, Ramos Pinto under one unified banner, reflecting a family-owned company with a strong heritage and global presence in fine wines and Champagne. This unification aims to combine the diverse estates’ strengths while maintaining their unique identities within the collective Roederer Collection.

We had the pleasure to chat with Frederic Rouzaud when he visited Singapore, the visionary behind Louis Roederer, who personally shared his wine picks to elevate your Christmas dinner.

 

Pair Fresh Oysters with: Roederer Estate Quartet Brut

A classic culinary match, the crisp acidity and effervescence of sparkling from cooler climate in Anderson Valley provide a refreshing contrast to the briny, mineral-rich flavor and creamy texture of oysters.

 

Pair Salmon Rillettes or Ceviche with: Domaines OTT Clos Mireille Rose

Provence rosé pairs wonderfully with these dishes. The bright acidity of Provence rosé cuts through the creamy texture of salmon rillettes, balancing its richness while enhancing the subtle smoked and fresh salmon flavors. For salmon ceviche, the wine’s crispness and minerality harmonize with the citrusy, tangy marinade and the fresh texture of the fish, refreshing the palate and highlighting the dish's vibrant flavors.

 

Pair Coq au Vin with: Louis Roederer Cristal Rose

The 2014 Cristal Rosé exhibits exuberant fruit notes like wild strawberries, raspberries, and red currants balanced by a smoky, toasty layer from the Pinot Noir, creating a whirlwind of flavors that enhance the dish’s rustic chicken, mushroom, bacon, and red wine sauce. Its crystalline acidity and saline minerality refresh the palate against the dish’s richness, while the wine's subtle spice and undergrowth aromas harmonize with the earthiness of coq au vin.

 

Pair Roasted Rack of Lamb with: Pichon Lalande

The wine’s powerful structure, full body, refined tannins, and complex flavors complement the rich, savory characteristics of the lamb. The 2017 vintage features a blend dominated by Cabernet Sauvignon (around 70%) with Merlot and smaller amounts of Cabernet Franc and Petit Verdot, delivering aromas of blackcurrant, raspberry, violets, cedar, spices, and subtle earthiness which enhance the lamb’s succulent texture and the savory, herbaceous flavors often found in roasted preparations.

 

Pair Bûche de Noël (Christmas Yule Log) with: Ramos Pinto Tawny Quinta de Ervamoira 10 Years

A 10-year-old Tawny Port pairs beautifully with this dessert because its rich, nutty, and caramel flavors complement the dessert's buttery, chocolatey, and creamy layers. The Tawny Port’s notes of dried fruit, cinnamon, cloves, caramel, and vanilla echo the traditional flavors of the Yule Log, enhancing its sweetness without overwhelming it, making it a classic and indulgent Christmas pairing.
