Domaine Fabien Coche carries forward the Coche-Bizouard legacy, a family domaine founded in the 1940s that has quietly built a reputation for finesse across nearly nine decades in Meursault.
Fabien, a fourth-generation winemaker, assumed leadership in 2005 after honing his craft alongside his cousin at the legendary Domaine Coche-Dury, gaining insight into their exacting standards. Today, he tends 12 hectares focused overwhelmingly on Chardonnay from elite Meursault premier crus like Les Chevalières, Clous, Perrières, and Goutte d’Or, with select reds from neighboring Monthélie sites such as Les Barbières.
His hands-on approach: hand-harvesting from old vines in limestone-laced soils, gentle pressing, native yeast ferments, and extended aging in large oak foudres, preserves the wines’ electric purity, minerality, and site-specific vibrancy without overt oak influence.
The result: precise, age-worthy Burgundies that rival the best of the Côte de Beaune.
With soil health as a core focus, Fabien Coche has committed to organic viticulture for healthier soils since 2017, achieving full certification in 2023.
