Winemaker notes
Sparkling wine is often pitched as a celebration wine, but we see no need to restrict its consumption purely to celebratory occasions. Some of our favourite times to drink bubbles are not noteworthy occasions at all, simply moments worthy of a delicious, refreshing drink!
The Adelaide Hills is renowned for high quality cool-climate Chardonnay, so there was no question as to where we would look for our first Blanc de Blancs. Careful fruit selection and attentive winemaking give a fresh-fruited wine with some nutty complexity and interest from lees contact.
This is an elegant wine with ‘Granny Smith’ apple acidity and almond biscotti flavours combining into a delicious drink to enjoy with friends. Serve chilled — around 8° to 10°C.
Tasting notes
Wine Advocate 90: Offering lemon curd and green apples on the nose, this NV Adelaide Hills Blanc de Blancs is lively and fine, with a chalky vein of phenolics that thread through the palate. In the mouth, the wine is plump, the mousse soft and all things in good place. Very fresh. The dosage sits well, but any more and it would be obvious—it adds to the polish and slick of the wine currently.
James Halliday 94pts: The base wines (100% chardonnay) came from 2020 to ’22, grown at Lobethal and Kuitpo; wild-yeast ferments of full-juice solids in tank and seasoned puncheons. The result is a complex, textured wine not made by the traditional method.
